Doubles (Trinidad and Tobago)

This is a dish that I have had my eye on ever since I started this project. Something about the name Doubles just seems fun and reading about the dish on Wikipedia intrigued my interest.

Fried bread stuffed with curried chickpeas, sign me up! This was a pretty casual dish to make first you start with making the dough for the Bara(the fried bread). I enjoyed this because I never work with bread making and seeing the dough double in size due to the yeast is really cool. Just be prepared that waiting for the dough to rise takes up to an hour so prepare accordingly.

While waiting for the dough to rise, you can start working on the Channa(Curried Chickpeas) which is just the chickpeas mixed with onions, garlic, and Trinidadian curry powder. You let that simmer for a while and then when it is ready you can fry up the Bara. My dough ended up so sticky which made it hard to transfer to the frying pot, I probably did something wrong but I am not sure what.

Not the healthiest dish in the world but also not the worst for you. I followed the recommendation from the article and picked up some Kuchela. The Kuchela was awesome and well worth the money. It has a great tangy,spicy flavor that adds to the exotic nature of the dish. In addition to that I bought some yellow habañero hot sauce as I love the stuff. All in all, my Steeler fan friends loved the dish and I did too.  This would be great to make for a party because it is a blast to make and also really cheap once you have the lesser available ingredients.
