Next up in the national dish project was the dish Bobotie from South Africa. Bobotie is similar to a meatloaf that you then pour an egg-based sauce over near the end of the cooking time. The ingredients are very different than a typical American meatloaf. Bobotie includes Raisins, hot chutney sauce(very hard to find), apricot jam, and curry powder. I feel like a more authentic Bobotie uses lamb mince but that is also very hard to acquire in Texas.
Cooking the dish was straightforward, standard meatloaf preparation. The dish cooked quickly and I reduced the cooking time from the recipe, I will include below.
The only negative I had was my own damn fault. I put the dish in a cake pan instead of a glass baking dish and the bottom and sides were burnt.
Besides that one negative, the dish was delicious and I would make it again.
